The signature "Kamo Ramen" (Duck Ramen) features a chemical-MSG-free broth made solely from selected domestic duck, water, and a special blend of several types of soy sauce, gently simmered over low heat for two full days. This process creates a deeply concentrated, clear savoriness and rich duck flavor that pairs beautifully with the mellow, rounded notes of the blended soy sauce.

The noodles are a special straight, thin variety made with a blend of whole wheat flour, offering a pleasant snap and a nutty aroma that perfectly elevates the soup. The duck topping is prepared as a confit—marinated in a house sauce and cooked at a low temperature—resulting in a remarkably tender, moist texture that releases juicy sweetness with every bite. Upon ordering, customers select two types of toppings from three varieties of seasonal domestic green onions (negi) available each month.
