The shop's absolute signature creation is the original "Kitta-yatsu" (The Cut One). Born from the innovative idea to save the precious savory juices left on the grill, each completed burger is sliced vertically in half. The exposed cross-sections are then pressed back down onto the hot griddle for a "double-sear," allowing the premium whole-wheat buns to completely soak up the rich meat juices.
